Goodbye summer, I’ll miss you. Even as summer disappears into a fading dream there is one thing that will keep it fresh in my mind, the grill. As the days get shorter and cooler, I will continue to use my trusty backyard grill to make memorable seasonal meals. So it is with fond memories of summer, that I leave you with this Grilled Peach recipe.

Grilled Peaches:
4 ripe peaches
1 stick unsalted butter, softened
1/4 cup maple syrup
1/4 cup sliced almonds
2 tablespoons coconut oil for brushing
Prepare Peaches:
Start with halving and pitting the peaches. In a small bowl add the butter, maple syrup and 1/2 of the sliced almonds, (reserve the other half of the sliced almonds for final topping), stir until combined.
Heat grill to high. Brush peaches with coconut oil, as well as the grill and place peaches cut side down. Grill until golden brown and the peaches are cooked all the way through. Flip the peaches having skin side down on the grill. Place a tablespoon of the mixture in the center of each peach, top each peach with the remaining sliced almonds. Grill for an additional 1-2 minutes.
I served mine with whipped cream and the leftovers with a salad the next day. These are simple to make super delicious.
